Preparation
Drain the jackfruit, rinse it under running water in a colander, and pat dry. Finely chop the onion.
Heat a little sunflower oil in a frying pan and sauté the onion. Add the drained jackfruit along with the Mix Oriental and stir well. Add the soy sauce and black bean sauce and cook over low heat for about 30 minutes. If the jackfruit mixture becomes too dry, add a little water. Stir occasionally until the jackfruit is soft and easy to pull apart. Using two forks (or your hands), shred the jackfruit into strings.
Mix the satay sauce (ready-made) with the coconut milk. Slice the spring onions into rings.
Toast the grated coconut in a dry frying pan until golden brown and let it cool on a plate.
Steam the bao buns in a steamer basket or in the microwave, according to the instructions on the package.
Fill each bun with the jackfruit and a dollop of coconut satay sauce. Garnish the bao buns with the scallion rings and toasted coconut.
