Cauliflower curry with cashew nuts

Cauliflower curry with cashews. This vegetarian curry is packed with vegetables—a good 450 grams per person! Serve the curry with rice and garnish with cashews. Delicious with World Spice Blend - Garam Masala.
Preparation
Chop the onion, cut the cauliflower, bell pepper, carrot and zucchini into equal cubes.
Cook the rice according to the package directions. Meanwhile, cook the cauliflower until tender, about 8 minutes, then drain.
Sauté the onion. Add the bell pepper and carrot and cook for about 2 minutes. Add the zucchini and World Spice Blend - Garam Masala and cook for another 2 minutes. Add the coconut milk and cauliflower and cook for another 2 minutes.
Serve the cauliflower curry with the rice. Garnish with the cashews.
