Middle East snack platter
Preparation
Hummus: Finely chop the onion and crush the garlic. Season with 3 grams of Ras el Hanout spices and let cool. Place the chickpeas, 40 grams of tahini, sunflower oil, the juice of half a lemon, and the onion/garlic mixture in a food processor and process until hummus forms. Serve in a bowl and garnish with olive oil and Za'atar spices.
Labneh: Let the yogurt drain overnight in a damp tea towel. Mix the resulting strained yogurt with 50 grams of tahini and the juice of half a lemon. Season with salt, if desired. Spread the labneh on a flat plate, with most of the mass on the outer edge.
Zaalouk: Finely chop the red onion and crush the garlic. Cut the eggplant and tomato into pieces. Sauté the onion and garlic in olive oil and add the eggplant. Once the eggplant is browned, add the tomatoes and chermoula. Simmer until the mixture thickens. Add a little water if necessary. Season with salt to taste. Let cool and serve in the center of the labneh. Garnish with sumac and chopped pistachios.
Briwat: Make a farce with the feta, Ras el Hanout herbs, mint, dill, and egg. Place a sheet of filo pastry on a work surface and brush with oil, then place another sheet of filo pastry on top. Cut lengthwise into 5 cm wide strips. Place some farce at the bottom of each strip and fold it three ways into an envelope. Fry until crispy in oil and sprinkle with Za'atar herbs.
Stuffed dates: Mix the cream cheese with 3 grams of Ras el Hanout and the orange zest. Pit the dates and fill them with the cream cheese. Garnish with a walnut.
