Coarsely chop the dill. Whisk together the dill, eggs, World Spice Meal - Omelet, and crème fraîche until smooth.

Halve the avocados, remove the pit, and scoop the flesh from the skin with a spoon. Cut the avocado into slices.

Remove the skin from the hot-smoked salmon and cut into large pieces.

Heat the olive oil in a pan over medium heat and add the egg mixture. Stir the egg mixture as it begins to set.

Meanwhile, cut the croissants in half. Divide the lamb's lettuce, scrambled eggs, warm-smoked salmon, and avocado over the croissants. Garnish with the remaining dill and serve.
