Bruschetta with zucchini and goat cheese cream
These crispy zucchini bruschettas are slightly spicy thanks to the World Spice Blend - Harissa seasoning. The freshness of the lemon and the richness of the goat cheese balance out the dish.
Bruschetta is a must-have for high tea. For this recipe, top the typical Italian slice of toasted bread with zucchini and goat cheese cream. The crispy zucchini bruschetta has a slightly spicy flavor thanks to the World Spice Blend - Harissa. The fresh lemon flavor and the rich goat cheese in the cream create a perfect balance.
Preparation
Preheat the oven to 180°C. Cut the zucchini into 1 cm thick slices and finely chop the dill.
Cut the baguette into 2 cm thick slices, brush each with 1 tablespoon of olive oil, and sprinkle with sea salt. Place the bread on a baking rack and bake in the preheated oven for 10 minutes, or until golden brown and crispy.
Heat 1 tablespoon of olive oil in a grill pan and grill the zucchini slices on each side for 3 minutes. Remove the zucchini from the pan and cut it into three 4cm pieces.
Mix the goat cheese with the World Spice Blend - Harissa herbs and grate the lemon zest through it.
Divide the goat cheese over the bruschetta, place the zucchini slices on top and garnish with the dill and remaining extra virgin olive oil.
