Chakalaka with bell pepper and toasted bread

Chakalaka is a slightly spicy vegetable stew with beans from African cuisine. A delicious dish for vegetarians or anyone who wants to go meatless for a day. The stew is seasoned with various herbs and contains over 250 vegetables per serving. Delicious with toasted bread!
Preparation
Peel and finely chop the onion and garlic cloves. Peel and finely chop the ginger. Halve the bell peppers, remove the seeds, and dice. Slice the carrots into half-moons and the white cabbage into strips. Finely chop the red chili pepper.
Heat the oil in a pan and sauté the onion and garlic until translucent. Add the bell pepper, garlic, ginger, and red chili pepper and cook for 3 minutes. Add the carrot, cabbage, and 2 tablespoons of World Spice Blend - Cajun and cook for 10 minutes over low heat.
Add the tomato paste, canned tomatoes, white beans, and sea salt. Reduce heat and simmer for 10 minutes.
Slice the bread, spread with the butter and the remaining World Spice Blend - Cajun. Heat a grill pan and grill the bread for 2 minutes. Strip the thyme from the sprigs.
Serve the Chakalaka with the grilled bread and garnish with fresh thyme.
