Chili sin carne
Vegetarian version of the well-known chili con carne.
This chili sin carne is a vegetarian version of the popular chili con carne. The dish doesn't contain ground beef, but vegetarian mince, so you still get the meaty flavor. If you prefer to make the dish with meat, brown the ground beef and then add the vegetables and legumes.
Preparation
Rinse the bean mixture under running water and drain. Drain the corn as well. Cut the onion into half rings. Finely chop the garlic. Dice the green bell pepper. Strip the cilantro leaves from the stems and coarsely chop them.
Cook the rice according to the instructions on the package.
Heat the olive oil in a Dutch oven and sauté the onion and garlic. Add the bell pepper, beans, canned diced tomatoes, and vegetarian mince. Combine 2 teaspoons of World Spice Meal - Chili Con Carne with the water in a measuring cup and add this to the chili sin carne. Cover and simmer for 10 minutes over low heat.
Serve the chili sin carne with the rice. Garnish generously with tortilla chips and fresh cilantro.
