A richly filled zucchini soup with broccoli and potatoes. Delicious with a mixture of crème fraîche, fresh mint, and coriander.
Preparation
Peel and rinse the potatoes. Cut the broccoli into florets. Dice the broccoli stems, potatoes, and zucchini. Finely chop the onion and garlic.
Heat a large soup pot and sauté the onion and garlic in the (olive) oil until translucent. Add the broccoli, potatoes, and zucchini and cook for about 3 minutes.
Add the water and the World Spice Blend - Napoli. Simmer over low heat for about 25 to 30 minutes.
Meanwhile, finely chop the fresh mint and cilantro. Mix the crème fraîche with the mint and cilantro in a small bowl and set aside.
Puree the soup with an immersion blender. Add salt to taste, if desired. Garnish the soup with crème fraîche to taste.

- 125 g crème fraîche
- 5 g verse mint
- 5 g verse koriander
- 3 á 4 tl World Spice Blend - Napoli
- 2 el (olijf)olie
- 1 liter water
- zout, naar smaak
