Couscous with falafel and tahini dressing
A deliciously fresh couscous salad made with pomegranate seeds and mint.
Couscous is incredibly versatile. Its neutral flavor makes it a perfect match for a wide variety of dishes. We drew inspiration from the flavors of the Middle East. The result: a refreshing couscous salad with pomegranate seeds and mint, served with falafel and a tahini dressing.
Preparation
Pour the warm broth over the couscous, along with the olive oil and World Spice Meal - Couscous. Stir well and let it sit for 5 minutes.
Slice the carrots thinly into half-moons. Slice the cucumber and slice the spring onion diagonally into rings. Finely chop the mint and mix everything into the couscous.
Prepare the falafel according to the instructions on the package.
Make a dressing of the tahini, lemon juice, extra virgin olive oil, water, honey and sea salt.
Divide the couscous among the plates and garnish with the pomegranate seeds and tahini dressing.

- 400 ml groentebouillon
- 300 g couscous
- 1 el olijfolie
- 1,5 el World Spice Meal - Couscous
- 2 winterpenen
- 4 mini komkommers
- 2 stengels bosui
- 3 takken munt
- 420 g falafel
- 4 el tahin
- 1 el citroensap
- 1 el extra vierge olijfolie
- 1 el water
- 1 tl honing
- 1/2 tl Zeezout
- 50 g granaatappelpitten
