The apple pie base is filo pastry, baked in a mixture of biscuit and speculaas butter. By using Blue Band Heerlijk Romig (Deliciously Creamy), the pie is entirely plant-based. Add Verstegen Koek & Speculaas (Cook & Speculaas) for a warm flavor, Kanzi apples for a refreshingly sweet note, and top it all off with orange and pistachios for a surprising twist. The result? A delicious apple pie that crunches with every bite!

Bereidingswijze

Preheat the oven to 170°C (350°F). Slowly melt the Blue Band Delicious Creamy and Verstegen Spice Mix for Cookies & Speculaas in a pan.

Line the springform pan with baking paper and grease with some of the herb mixture.

Lay 1/3 of the filo pastry sheets horizontally on top of each other and spread some of the herb mixture on top. Fold the filo pastry lengthwise in concertina-like steps. Place it in the center of the springform pan like a rose. Repeat this with the remaining filo pastry, folding the concertinas around the center rose to fill the springform pan.

Cut the apples into quarters and thinly slice them. Core them. Place the apple slices between the filo pastry layers. Bake the filo pastry apple pie in the preheated oven for 35 minutes.

Meanwhile, heat the sugar, maple syrup, and water in a saucepan. Bring to a boil and simmer for 4 minutes. Immediately pour the sugar water over the apple pie as soon as it comes out of the oven.

Grate the orange zest (don't include the white part, as it's bitter) and roughly chop the pistachios. Sprinkle over the apple pie and serve immediately.
