Gado Gado spring rolls with Crunchy Peanut Sauce
These fresh, vegetable-packed spring rolls are inspired by the Indonesian classic gado-gado. Delicious as a side dish or a light snack.
Preparation
Cook the green beans in plenty of water for about 10 minutes until al dente. Drain and rinse under cold water.
Wash the cucumber and cut it into thin strips. Rinse the bean sprouts if necessary. Prepare the rice paper according to the package directions.
Place some green beans, white cabbage, bean sprouts, and cucumber in the center of each rice paper sheet. Fold the sides inward and roll up tightly.
Serve the spring rolls with Guilt-Free Crunchy Peanut Sauce for dipping. Healthy, fresh, and full of flavor!
