Spicy prawns with stir-fried vegetables

What exactly are prawns, and how do they differ from scampi? This dish uses prawns. Prawns belong to the shrimp family, while scampi belong to the crustaceans. Think langoustines and crayfish.
Serve these spicy prawns with stir-fried vegetables in a pappadum for a special twist on your dish.

Preparation

Cut the red onion into half rings, the tomatoes into wedges, the carrot into half slices and the pepper into julienne.

Fry the prawns briefly and set aside.

Fry the vegetables and add the tomato puree.

Deglaze with white wine and fish stock.

Stew briefly until cooked and add the Piri Piri Sauce.

Bring to the boil and stir in the prawns.

Serve in the pappadum and garnish with Piri Piri herbs and basil cress.

  • 4 pappadums
  • 500 g gamba's (gepeld)
  • 1 rode ui
  • 1 tomaat
  • 1 wortel
  • 3 x 1/2 paprika (3 kleuren)
  • 2 el tomatenpuree
  • 1 dl witte wijn
  • 1 dl visbouillon
  • 4 laurierbladeren
  • basilcress
