Grilled little gem with spicy salsa

These grilled little gems with spicy salsa are the perfect side dish for a BBQ. The tomato salsa makes for a delicious salad that's also wonderful to enjoy in the summer. The cashews add a crunch that perfectly completes this dish.
Preparation
Cut the little gem lettuce heads in half lengthwise, leaving the ends on so the leaves don't fall off. Brush the cut sides with a little olive oil and grill on the barbecue or in a grill pan for about 2 minutes on each side.
Roast the cashews in a dry pan and let them cool on a plate. Then coarsely chop the roasted cashews.
Juice the lemon. Quarter the tomatoes, remove the seeds, and finely dice the flesh. Finely chop the red onion and roughly chop the capers and olives. Mix the chopped tomatoes, chopped onion, and chopped capers and olives. Add a drizzle of olive oil, the lemon juice, and the herbs of Provence to the salsa. Season with black pepper and sea salt.
Place the grilled little gem on a platter, pour the tomato salsa over it and garnish with cashew nuts.

- 400 g tomaten
- 3 el kappertjes
- 1 el zwarte olijven zonder pit
- 2 el Provençaalse kruiden
- 1 citroen
- 75 g cashewnoten
- olijfolie
- Zwarte Peper Zeezout
