Vegetarian salad with grilled sweet potato
This grilled sweet potato salad is packed with vegetables. Grilling the sweet potato gives it a soft texture and makes a delicious addition to fresh and crunchy arugula. The addition of World Spice Blend - Harissa gives the salad a delicious savory bite.
Preparation
Preheat the oven to 200ºC.
Rinse the sweet potatoes under the tap and cut them into small pieces.
Divide the World Spice Blend - Harissa together with the olive oil over the sweet potato wedges.
Divide the wedges over a baking sheet lined with baking paper and bake for about 20 minutes until done.
Meanwhile, make the salad dressing. Mix the honey with the balsamic vinegar.
Halve the cherry tomatoes. Then arrange two plates with the arugula, silver onions, cherry tomatoes, and hazelnuts.
Once the sweet potato comes out of the oven, spread it over the top, drizzle with some dressing to taste and garnish with Parmesan cheese flakes.
Variatietip
Liever een koude salade. Laat dan de zoete aardappel na de oven eerst afkoelen. Zo kun je de salade bijvoorbeeld ook makkelijk meenemen. Ook lekker om toe te voegen: feta, gegrilde groenten of linzen.

- 25 g hazelnoten (ongezouten)
- 3 el zilveruitjes
- 1 el balsamicoazijn
- 1 el honing
- 3 tl World Spice Blend - Harissa
