Making your own meatloaf doesn't have to be difficult. Try this recipe: meatloaf with mashed potatoes and green beans. The mashed potatoes are made with butter and cream, which creates a wonderfully creamy texture. Along with the green beans, this is the perfect pairing for homemade meatloaf!

Preparation

Preheat the oven to 180°C. Remove the tops of the green beans and finely chop the parsley.

Peel the potatoes and cut them into 3 cm pieces. Rinse the potatoes with cold water to remove the starch. Fill a pot with cold water and add the potatoes. Boil the potatoes for 20-25 minutes, or until tender.

Mix the breadcrumbs, egg, parsley, and Mix for Minced Meat with Onions with the minced meat. Line a baking pan with parchment paper and spread the minced meat evenly. Place the pan in the preheated oven for 20 minutes, or until golden brown and cooked through.

Bring a pan of water to the boil and cook the green beans for 3 minutes until al dente.

Mash the potatoes with butter and cream and season with salt.

Remove the meatloaf from the oven and cut it into 2-cm-thick slices. Serve the meatloaf with the mustard, green beans, and mashed potatoes.

Variatietip

Voor een vegetarische variant op dit gerecht gebruik je vegetarisch gehakt. Een andere optie is het gehaktbrood vervangen door aubergine. Bak de aubergine in zijn geheel goudbruin en pof deze met zout, peper, knoflook en rozemarijn in 20 minuten gaar in de oven.
