Preparation
Preheat the oven to 180°C (350°F). Peel the orange sweet potatoes and cut them into small cubes. Shell the fresh green beans.
Mix the half-and-half ground meat with the Breton Ground Meat Mix. Form four balls and flatten them into a medallion about 4 to 5 cm thick. Wrap each medallion all around with a long slice of bacon. Place all the medallions on a baking sheet lined with parchment paper and bake in the preheated oven for 14 to 17 minutes.
Meanwhile, cook the sweet potatoes in a large pan of boiling water for about 10 to 15 minutes, or until tender. Drain the sweet potatoes and add the milk. Mash the puree with a potato masher until smooth. Season with coarse mustard and black pepper and/or sea salt to taste, if desired.
Meanwhile, bring a large pot of water to a boil. Add the green beans and cook for 5 to 6 minutes, or until al dente. Drain the green beans and toss them with a knob of butter or a drizzle of oil. Then stir the Vegetable Finish – Bean Mix into the green beans.
Serve the minced meat medallions with the spiced green beans and sweet potato puree.
