Marinated pineapple with white chocolate mousse

This dessert combines the sweet taste of grilled pineapple with a light white chocolate mousse.

Preparation

Boil the water with the sugar, star anise and cardamom and cool.

Peel the pineapple, cut into quarters and remove the core.

Place the sliced ​​pineapple in the vacuum cooking bag and add the cooled spice-sugar water.

Vacuum seal and cook for 30 to 40 minutes at 85 ºC in the combi steamer.

For the chocolate mousse, put 100 ml of whipping cream with the liqueur and brown rum in a pan and bring to the boil.

Remove the pan from the heat and melt the white chocolate in the simmering cream.

Beat the remaining 500 ml of whipped cream with the Chinese Five Spices in the food processor until fluffy.

Fold the chocolate into the whipped cream until you have a smooth chocolate mousse.

Allow the chocolate mousse to harden in the refrigerator.

Serve the pineapple cold or warm with the white chocolate mousse and red fruit, as desired.

Sprinkle the cooked pineapple with cane sugar and burn until caramelized.
