Baked potatoes with herb butter
Baked potatoes for the barbecue with homemade herb butter.
British-style: jacked potatoes. These baked potatoes are a perfect side dish for a BBQ. They're incredibly easy to make and delicious with homemade herb butter. Have some herb butter left over? Add it to some roasted corn on the cob or spread it on a slice of baguette.
Preparation
Scrub the potatoes under the tap and dry them well.
Place two layers of aluminum foil on top of each other and top each potato with a layer of olive oil and a teaspoon of Potato Mix. Fold the aluminum foil over the potato, making sure it's completely sealed. Repeat with all the potatoes.
Place the parcels among the hot coals of the barbecue for about an hour. Rotate the potatoes a quarter turn every fifteen minutes.
Mix the softened butter with a bag of Herb Butter Mix and place it in a container. Let the herb butter harden in the refrigerator.
Cut the chives into thin rings.
Check if the potato is cooked by opening a package and inserting a skewer into the potato. If the potato is soft, it's done.
Cut the potatoes in half lengthwise, add a spoonful of herb butter and garnish with chives.

- 250 g ongezouten boter, op kamertemperatuur
- 1 zakje Mix voor Kruidenboter
- 1/2 bosje bieslook
