Stuffed sweet potatoes with minced meat and beans

Stuffed sweet potatoes with ground meat, beans, and avocado. This recipe for stuffed sweet potatoes is easy to make. Delicious with crumbled ground meat, cannellini beans, avocado, and crème fraîche.
Preparation
Preheat the oven to 180 degrees.
Wash and pat the sweet potatoes dry. Prick several holes all over each potato with a fork. Place the potatoes on a baking sheet lined with parchment paper and bake in a preheated oven for about 20 to 30 minutes, or until tender.
Meanwhile, drain and rinse the cannellini beans. Finely chop the onion. Dice the avocado and slice the spring onion into rings. In a small bowl, combine the crème fraîche with the lemon juice and zest.
Heat the (olive) oil in a frying pan and sauté the onion until translucent. Add the ground meat and the World Spice Blend - Napoli and brown the ground meat.
Add the strained tomatoes and cannellini beans and cook, stirring, for about 1 minute. Season with sea salt to taste, if desired.
Remove the sweet potatoes from the oven, cut them open lengthwise, and arrange them on a plate. Divide the filling over the sweet potatoes. Garnish with the avocado, spring onion, and crème fraîche dip.
