Gorditas with spicy minced beans
Gorditas with spicy minced peas. These vegetable-packed gorditas are the perfect dish when you don't have much time to cook. Delicious with spicy ground beef, avocado, bell pepper, kidney beans, and other delicious seasonings.
The spicy ground peas give the dish a wonderfully flavorful kick. Use gorditas as the base, or, if you're following a gluten-free diet, corn tacos, and top it off with cheddar and a little crème fraîche.
Preparation
Preheat the oven to 180°C (350°F). Halve the avocados, remove the pit, peel, and slice. Peel the red onion and slice into rings.
Cut the red bell pepper into 2 cm cubes. Rinse the kidney beans under cold water.
Prepare the Knead & Ready Pulse Mince - spicy seasoning - according to the package directions. Heat the olive oil in a pan and cook the pulse mince for 4 minutes. Add the kidney beans, red bell pepper, black pepper, and sea salt and cook for another 4 minutes.
Place the gordita wraps on a baking sheet lined with parchment paper and spread the grated cheddar cheese on one side. Roast in the oven for 10 minutes.
Remove the gordita wraps from the oven and divide the minced meat mixture, red onion and avocado on the side without cheese.
Place the gordita wraps half-folded on the plates and spread the lactose-free crème fraîche over them.

- ½ tl Zwarte peper
- ½ tl Zeezout
- 8 gordita wraps
- 80 gr geraspte cheddar
- 70 gr lactosevrije crème fraîche
