Vegetable skewers with bell pepper, zucchini and mushrooms
A delicious vegetarian skewer with bell pepper, zucchini, (chestnut) mushrooms and red onion, grilled on the barbecue.
This recipe makes 8 vegetable skewers.
Preparation
Soak the skewers in water.
Cut the yellow and red bell peppers into large chunks, the zucchini into half slices, and the red onion into large chunks. Halve the (chestnut) mushrooms, if desired.
In a large bowl, combine the olive oil with the World Spice Blend - Tuscany.
Add the bell pepper, zucchini, (chestnut) mushrooms and red onion and mix well, so that the mixture is distributed over all the vegetables.
Light the barbecue.
Thread the marinated vegetables alternately onto the skewers.
Grill the vegetable skewers on the barbecue for about 6 to 8 minutes until done.
Variatietip
Wil je géén vegetarische groentespies? Vervang dan de gele paprika ook eens voor een kipfilet. Marineer de kipblokjes mee met de groenten.
