Roasted chicken with Cajun spices from the barbecue
Enjoy delicious roasted chicken from the barbecue with this recipe. The World Spice Blend – Cajun gives the chicken a delicious North American flavor.
Preparation
Lay the chicken on its back. Cut the chicken open and use (game) shears to snip out the backbone. Turn the whole chicken over and flatten it firmly into a flat chicken. Turn the legs outward. Tip: Insert two iron skewers crosswise through the chicken so you can easily turn it on the barbecue.
Marinate the chicken thoroughly with the World Spice Blend - Cajun. Let this sit for 1 hour to allow the flavors to fully develop. Marinate the chicken the night before, for example.
Light the barbecue. Place the chicken over direct heat and grill it on both sides. Then place the chicken on a generous piece of aluminum foil and cook it over indirect heat with the lid on the barbecue. This will take about 30 to 40 minutes. Tip: Check the core of the chicken with a thermometer to see if it's cooked through. It should be at least 75°C (167°F).
