Italian burger with pancetta and gorgonzola
An Italian-style hamburger, served on a ciabatta.
A delicious Italian burger with a fresh shallot compote, pancetta, and gorgonzola. Serve this burger on a ciabatta for a simple dinner.
Preparation
Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit). Place the pancetta slices on a baking sheet lined with parchment paper and bake for about 30 minutes until crispy.
Meanwhile, make the shallot compote: Slice the shallots into rings. Halve the orange and squeeze out the juice. Heat a frying pan and sauté the shallots in the olive oil until translucent. Add the brown sugar and caramelize. Deglaze with the balsamic vinegar and orange juice. Reduce until all the liquid has evaporated.
Meanwhile, mix the minced meat with the Italian Minced Meat Mix and form into hamburger patties.
Meanwhile, heat a frying pan with olive oil and fry the burgers until done.
Meanwhile, halve the baked ciabattas and toast them for about 5 minutes in a dry frying pan.
Meanwhile, thinly slice the tomatoes. Wash the baby romaine lettuce and separate the leaves. Mix the mayonnaise with the herbs of Provence.
Top the bottom half of the ciabatta with a lettuce leaf, tomato, pancetta, and mayonnaise. Place the hamburger patty and compote on top. Sprinkle with gorgonzola cheese and place the top half of the ciabatta on top.

- 80 g pancetta
- 2 tomaten
- 100 g gorgonzola kaas
- 1 krop baby romaine sla
- 1/2 zakje Mix voor Gehakt - Italiaans
- 4 el mayonaise
- 1 tl Provençaalse kruiden
- (olijf)olie
- Voor de sjalotten compote:
- 2 sjalotten
- 1 sinaasappel
- 1 tl bruine basterdsuiker
- 1 à 2 el balsamico
