Jerk Chicken, the traditional and beloved Jamaican chicken. You're supposed to cook it on the BBQ, but we prepare it in the oven. Deliciously marinated chicken with crispy oven-baked potatoes, coleslaw, chili mayo, and lime wedges.

Preheat the oven to 180°C (350°F). Combine 3 tablespoons of olive oil with 1 teaspoon of sea salt and the World Spice Blend - Jamaican Jerk to make a marinade. Brush the chicken drumsticks with the marinade and let them sit for 30 minutes. Spread the chicken drumsticks on a baking sheet lined with parchment paper and bake for 30 minutes.

Bring a large pot of water to a boil and cook the potatoes for 15 minutes. Drain and quarter the potatoes. Place them in a baking dish and drizzle with the remaining olive oil and sea salt. Roast for 20 minutes in the preheated oven.

Slice the white cabbage into strips. Peel the mango and slice off the flesh around the pit. Then dice. Grate the carrot and roughly chop the greens. Mix half of the greens with the carrot, shredded cabbage, mango, and coconut yogurt to make a coleslaw. Mix the mayonnaise with the chili sauce and slice the lime into wedges.

Serve the Jerk Chicken with the potatoes, coleslaw, chili mayo, and lime wedges. Garnish with the remaining carrot greens.
