Grate the zest of half the lime (don't grate the white part, as it's bitter) and squeeze out the juice. Cut the remaining lime into wedges.

Slice the baby potatoes and rinse them under cold water. Place the potatoes in a pan, just covered, and bring to a boil. Cook for 5 minutes until al dente, then drain.

Meanwhile, marinate the chicken fillet with 2/3 of the World Spice Meal - Chicken Madras and ½ of the sunflower oil and leave to marinate in the refrigerator for 10 minutes.

Heat the remaining sunflower oil in a pan and sauté the baby potatoes, broccoli florets, and peas for 4 minutes. Add the remaining World Spice Meal - Chicken Madras and deglaze with the coconut milk, lime zest, and juice. Simmer gently for 5 minutes.

Meanwhile, heat a grill pan and grill the chicken fillet for 8 minutes until done.

Divide the vegetables among plates and top with the grilled chicken breast. Garnish the chicken madras with lime wedges.
