Chicken drumsticks with potato wedges and spinach

The chicken drumsticks are seasoned with World Spice Blend - Garam Masala, a delicious Indian spice mix. Mix Greek yogurt with lemon zest for a refreshing touch. For a low-carb version, substitute eggplant and cherry tomatoes for the potato wedges.
Preparation
Marinate the chicken drumsticks with the World Spice Blend - Garam Masala and 1 tablespoon of olive oil. Then refrigerate for 10 minutes.
Meanwhile, peel and finely chop the garlic and onion. Heat 1 tablespoon of olive oil in a pan over medium heat and cook the chicken drumsticks for 10 minutes, or until golden brown and cooked through. Turn the chicken drumsticks regularly while handling them.
Meanwhile, heat another pan over medium heat with the remaining olive oil and sauté the garlic and onion for 3 minutes, or until lightly browned. Add the potato wedges and sauté for 6 minutes, or until golden brown. Gently fold in the spinach and sauté for 2 minutes, until wilted. Season with salt to taste.
Grate the lemon with a fine grater and mix it with the Greek yoghurt.
Serve the chicken drumsticks with the potato wedges and spinach. Finally, spoon the lemon yogurt over the top.
Variatietip
Wanneer je het gerecht koolhydraat arm wil houden vervang je de aardappelpartjes door aubergine en cherrytomaten. Snijd de aubergine in blokken van 2 cm en halveer de cherrytomaten. Bak deze voor 5 minuten en voeg hier de spinazie aan toe.
