The taste of chili

A dried chili has a richer and sharper flavor because the seeds and membranes are usually dried and ground along with the chili. With a fresh chili, you can control the heat in your dish by omitting (some of) the seeds and membranes. Did you know that the shape of the chili also reflects its heat?
