The origin of green pepper

Green pepper is a berry that grows on a tropical, perennial climbing plant. The plant can reach a height of 6 to 9 meters and thrives in a warm, humid, and tropical climate. India, Malaysia, Madagascar, and Brazil have the ideal climate for this, and these are the countries where green pepper is primarily produced. Verstegen sources its green pepper from India. When the berries are still unripe and green, they are hand-picked. They are still smooth on the outside and 2.5 to 3 mm in size. Once the green pepper berries have ripened and matured, they are processed into black or white pepper.

Smell and taste of green pepper

Green pepper has a characteristic green color and a herbaceous, spicy aroma that defines the spice. The typical and most familiar green pepper flavor can be obtained by pickling the green peppers and then bottling or canning them. The flavor is then quite different from freeze-dried peppercorns or air-dried peppercorns.
The flavor of pickled green peppercorns is stronger. The brine used is a combination of water, vinegar, salt, and citric acid. The color of freeze-dried and/or air-dried peppercorns can range from light, fresh green to greenish-gray.

Uses of green pepper in cooking

Green pepper is ideal for flavoring sauces, poultry, meat, and fish. The spice is also used in fillings for pies and pates. The peppercorns are usually added whole and are often used as a garnish. The flavor also works well in mayonnaise, aioli, or paella. In these dishes, the peppercorn is crushed first to extract the most flavor.
