Preparation
Preheat the oven to 180°C (350°F). Heat the olive oil in a pan and add the ground meat and the bag of Breton Ground Meat Mix. Brown the ground meat until browned, then add the diced tomatoes. Simmer for 3 to 4 minutes.
Meanwhile, boil the lasagna sheets for 2 to 3 minutes, until tender. Rinse under cold water to keep them pliable. Grease a 12-cup muffin tin with a little oil. Place the lasagna sheets in the cups and trim off any large pieces with scissors.
Fill each lasagna sheet with the ground meat mixture, about 2 tablespoons per sheet. Spoon 1 tablespoon of ricotta cheese over each. Sprinkle the grated cheese over the mini lasagna and bake for about 15 minutes. Serve with coarsely chopped parsley.
