Omelet with spinach and mozzarella
A vegetarian omelet wrap with spinach
This vegetarian omelette with spinach and mozzarella is delicious for lunch or breakfast.
Preparation
Quarter the cherry tomatoes. Cut the mozzarella into half slices.
Crack the eggs into a bowl. Add the milk, paprika (mild), and salt and/or pepper to taste. Stir with a fork until smooth.
Heat a small skillet, add the butter, and let it melt. Pour the egg mixture into the pan and let it set gently.
Spread the chives, mozzarella, cherry tomatoes, and spinach over one side of the omelet. Fold the omelet in half with a spatula and serve immediately.
Variatietip
Pas de omeletwrap naar smaak aan. Dit gerecht is ook lekker met gebakken spek, hamblokjes of zalmsnippers. Voeg dit in stap 4 toe.

- 20 g gewassen spinazie
- 5 cherrytomaten
- ¼ bol mozzarella
- 1 el melk
- 2 eieren
- 2 tl Paprikapoeder (mild)
- 1 tl Bieslook
- 10 g boter
- peper en zout, naar smaak
