Pangasius fillet with green beans and sweet potato
Spiced pangasius fillet with green beans from the oven.
A casserole with spiced pangasius fillet, green beans, bell pepper, sweet potato, and orange. Delicious for a weekday.
Preparation
Preheat the oven to 180°C (350°F). Wash, peel, and dice the sweet potato. Shell the green beans and halve them, if desired. Slice the bell pepper. Slice the orange halves.
Cook the green beans and sweet potato for about 1 to 2 minutes in boiling water and rinse under cold running water.
Place the pangasius fillet on a baking sheet lined with parchment paper. Season the fish with the Fish Mix - Traditional 100% Natural. Combine the sweet potato, precooked green beans, and bell pepper in a bowl with the olive oil. Season with black pepper and sea salt to taste. Place the vegetables and sweet potato on the baking sheet with the fish. Arrange some orange slices around the fish. Bake in a preheated oven for approximately 15 to 17 minutes.
Meanwhile, toast the pine nuts in a dry frying pan until brown.
Serve the seasoned pangasius fillet with vegetables and sweet potato on plates. Garnish with toasted pine nuts.

- 60 g pijnboompitten
