This vegan grilled cheese is the perfect lunch dish. The Cajun spices give the eggplant a delicious, spicy flavor.

Grilled cheese lovers, take note: you have to try this vegan grilled cheese with eggplant and grilled vegetable hummus! The Cajun spices give the eggplant a delicious, spicy flavor. Don't need the grilled cheese to be vegan? Then substitute the eggplant with chicken breast and cook it with the Cajun spices.

Preparation

Preheat the oven to 180°C (350°F). Cut the eggplant into 1-cm-thick slices. Place the eggplant on a baking sheet lined with parchment paper and drizzle with half the olive oil and the World Spice Blend - Cajun. Bake for 15 minutes, or until tender.

Cut the bread into 8 slices, each 2 cm thick. Spread the hummus over the bread and top 4 of the slices with spinach.

Divide the eggplant over the spinach and place the hummus sandwiches with the spread side on the eggplant.

Heat a pan with the remaining olive oil and fry the sandwiches on both sides until golden brown and crispy.
