Spicy potato salad with gherkins
Spicy potato salad with tangy vegetables and Cajun sauce.
This spicy potato salad makes a great side dish for a gourmet dinner. The celery, gherkins, and capers add a fresh flavor.
Preparation
Peel the potatoes and cut them into cubes of about 2 by 2 cm. Boil them in salted water until cooked (about 15 minutes). Drain and let cool.
Cut the celery and cornichons into small cubes and roughly chop the capers. Finely chop the parsley.
In a small bowl, mix the mayonnaise with the Greek yogurt and the World Spice Blend - Cajun. Season with a little lemon juice, if desired.
Mix the potatoes, celery, cornichons, and capers together and add the Cajun sauce until a creamy potato salad is formed. Finally, mix the parsley into the spicy potato salad.

- 1 stengel bleekselderij
- 8 cornichons (kleine augurkjes)
- 2 el kappertjes
- 100 ml mayonaise
- 100 ml Griekse yoghurt
- 2 el World Spice Blend - Cajun
- citroensap, naar smaak
- 1/2 bosje peterselie
