Preparation
Place the flour, 200 grams of sugar, and 175 grams of butter in a Hobart mixer fitted with a flat beater and pulse until a crumble dough forms. Coarsely chop the walnuts and mix them into the crumble dough.
Mix the Greek yoghurt with icing sugar and vanilla to taste and place in the refrigerator.
Mix the remaining sugar with the pumpkin spice herbs.
Peel the apples into nice round shapes, remove the core with an apple corer and halve the apples so that you have 2 round slices with a hole.
Bake the apple in the remaining butter and sugar with the pumpkin spice spices until nicely caramelized.
Grease silicone baking cups with baking spray and fill with the caramelized apples, spreading the caramel from the pan over the apples.
Fill the hole in the apple with almond paste, remove the pit from the cherries and divide the cherries over the apples.
Now cover the apples with the crumble dough with walnuts and bake the apple crumbles for 15 to 20 minutes in a pre-cooked oven at 180ºC.
