Quesadilla Tex Mex
Vegetarian quesadilla, delicious in combination with spicy salsas, chili sauce or guacamole.
A vegetarian Tex-Mex quesadilla with kidney beans, jalapeño peppers, and cashews. The Salsa Tex-Mex is a fresh, bright-red Mexican sauce with a nice kick. Serve this surprising quesadilla with crème fraîche and cilantro.
Preparation
Place a wrap in a dry frying pan.
Spread half of the salsa Tex-Mex.
Divide the corn, kidney beans, jalapeño pepper, spring onion, tomato, cashew nuts and cheddar over it.
Grind the Mexican spices over this.
Heat the pan and fold the wrap in half.
When the cheese starts to melt, turn the wrap over and bake.
Cut the quesadilla into wedges and serve with crème fraîche and coriander.
