Creamy pumpkin soup with coriander
Simple pumpkin soup served with cream and coriander.
Creamy pumpkin soup with coriander. The Verstegen Spice Oils used to flavor the soup are pure seasonings made from pure oil. You can easily add flavor to both hot and cold dishes with this. You only need a few drops.
Preparation
Cut the shallot and pumpkin into pieces.
Add the shallot and pumpkin and deglaze with the vegetable stock.
Cook the pumpkin until done, add the Spice Oil - Green Herbs Garlic and puree with a hand blender.
Chop the coriander and mix with the cream.
Fill the bowl and serve with a spoonful of cream.

- 1/2 dl slagroom
- 500 g pompoen
- 600 ml groentebouillon
