Sandwich with sweet potato, avocado and garden cress
Spicy sweet potato spread on a sandwich
A delicious sandwich with sweet potato spread and a spicy flavor. It's especially delicious with avocado and garden cress.
Preparation
Peel the sweet potatoes and cut into small cubes.
Boil the sweet potatoes for about 8 to 10 minutes until done, drain and let them rest covered for 5 minutes.
Rub the sweet potatoes through a fine-mesh sieve and add the World Spice Blend - Cajun and the butter cubes. Mix well and season with salt to taste.
Top the slice of coarse bread with the sweet potato spread. Slice the avocados and arrange them on the spread. Garnish with fresh garden cress to taste.
