These Sinterklaas cupcakes are fun to decorate together with the kids. Thanks to the Cookie & Speculaas Spice Mix, the cupcakes taste absolutely delicious. The toppings are endlessly versatile, so let your creativity run wild and decorate the cupcakes with whatever you like.

Preparation

Preheat the oven to 180°C.

Add 120 g butter, sugar, eggs, lemon juice, baking powder, salt, flour and the Spice Mix for Cookies & Speculaas to a bowl and mix until smooth.

Place the cupcake liners on a baking sheet and divide the batter among them. Bake the cupcakes for 15 minutes. Remove from the oven and let cool completely.

Meanwhile, make the buttercream according to the instructions on the package using the milk and the remaining butter.

Place the buttercream in a piping bag and pipe beautiful swirls onto the cooled cupcakes. Arrange the festive cupcake decorations in different bowls and decorate the cupcakes together with the children.

Variatietip

In dit recept zijn eetbare letters gebruikt om ‘sint’ en ‘piet’ te schrijven, mini pepernoten, gekleurde confetti, sterren van goud en sinterklaas van suiker. Maar je kan natuurlijk variëren met wat jij lekker vindt. Zo kan je ook mandarijn, marsepein en ander snoepgoed gebruiken.

  • 3 tl citroensap
  • 2 tl bakpoeder
  • ½ tl zout
  • 185 g bloem
  • 2 tl Specerijenmix voor Koek & Speculaas
  • 105 g mix voor botercrème
  • 125 ml melk
  • Feestelijke cupcake taart versiering, naar keuze
