Spinach salad with pistachio goat cheese balls

Enjoy this refreshing salad on a warm summer evening or during a leisurely lunch! The fresh lemon-pepper dressing balances all the flavors. The pistachios on the goat cheese balls add a nice crunch to the fresh flavors of the strawberries and cherry tomatoes.
Preparation
Roll the goat cheese slices into balls. Finely chop the pistachios and roll the goat cheese balls in ¾ of the pistachios.
Remove the stems from the strawberries and cut them into wedges. Halve the cherry tomatoes.
Grate the zest of the lemon (don't grate the white part, as it's bitter), halve it, and squeeze out the juice. Mix the lemon zest and juice with the olive oil, black pepper, and sea salt.
Mix the strawberries, cherry tomatoes and spinach with the black pepper dressing and divide over the plates.
Divide the goat cheese balls over the salad and garnish the salad with the remaining pistachios and season with extra black pepper.
