Spinach mash with a boiled egg
Variation tip: Also delicious with chipolata sausages instead of a boiled egg!
Go vegetarian and make a delicious spinach mash with a boiled egg. This classic combination probably sounds familiar, but we'll make it even more delicious with Verstegen spinach mash mix and extra mushrooms.
Preparation
Peel and halve the potatoes. Boil them in a pan of water for 15 to 20 minutes until tender.
Peel and cut the red onions into half rings and the mushrooms into wedges.
Heat the oil in a pan and sauté the red onion and mushrooms over high heat for about 5 minutes, or until tender. Add the fresh spinach in batches until wilted.
Boil the eggs in a pan. Cook for 3 to 4 minutes for soft-boiled, 5 to 6 minutes for medium-boiled, and 8 to 10 minutes for hard-boiled. Drain and cool in ice water.
Drain the potatoes. Add the milk and the Mix for Mashed Potatoes with Spinach and mash until smooth. Add the red onion, mushrooms, and spinach and mix well.
Peel the eggs and cut them into quarters. Divide the mashed potatoes among plates and serve with the boiled eggs.
