Sweet potato mash with salmon

You don't often encounter a fish stew, until now! We've replaced the meat with a delicious piece of salmon. Combined with the freshness of the cherry tomatoes and the sweetness of the potatoes, the fish is a perfect addition to this dish.

Preparation

Peel the sweet potato and cut it into 3cm pieces. Place a pan of cold water on the stove and boil the potatoes for 20 minutes, or until tender.

Meanwhile, slice the spring onions into rings. Prick the cherry tomatoes with a skewer or fork to prevent them from popping during cooking.

Heat the olive oil in a pan and cook the salmon for 8 minutes, or until cooked through. After 4 minutes, add the cherry tomatoes and cook them along with the salmon.

Cut the lemon into wedges and squeeze them over the salmon fillet.

Puree the sweet potato together with the spring onion, parsley, crème fraîche and the Sweet Potato Mashed Potato Mix.

Serve the mashed potatoes with the salmon and cherry tomatoes.

Variatietip

Vervang de zalmfilet door een kaasschnitzel voor de vegetarische optie. De kaasschnitzel wordt samen met de cherrytomaten en citroenpartjes gebakken. De citroen wordt dus niet uitgeknepen. Op die manier komt het zure van de citroen namelijk wel in het gerecht, maar verliest de schnitzel de krokante laag niet. Serveer het gebakken citroenpartje bij het gerecht.
