Baguette with herb butter and salad
A summer salad to share with grilled BBQ watermelon and feta, served with fresh herb butter and a hearty baguette.
Fresh herb butter is so easy to make and incredibly delicious! Pair it with a summer salad and bread for a delicious meal. This BBQ watermelon salad with creamy feta is perfect for a warm summer day.
Preparation
Preheat the oven to 200°C. Cut the cucumber and feta into small cubes, halve the plum tomatoes, and toss everything together in a salad bowl.
Mix the butter with the bag of Herb Butter Mix.
Bake the sturdy baguette according to the instructions on the packaging.
Cut the watermelon into 2 cm slices and remove the rind. Grill the watermelon for 4 minutes per side. Cut the watermelon diagonally into diamond shapes and mix with the cucumber salad. Add the arugula and garden cress and gently toss with the sea salt and black pepper.
Serve the salad with the herb butter and the sturdy baguette.
Variatietip
Voeg kip reepjes of uitgebakken pancetta toe aan de salade, wanneer deze niet vegetarisch hoeft te blijven. Let hierbij wel op of dat de salade niet te zout wordt bij toevoeging van de pancetta.
