Sweet Chili Pad Thai
Enjoy a flavorful Sweet Chili Pad Thai! The rice noodles are seasoned with a sweet chili sauce, which adds a pleasantly sweet yet slightly spicy kick. Add fried shiitake mushrooms, crispy carrots, fresh bean sprouts, and a touch of lime, and top it all off with cashews.
Bereidingswijze
Slice the shiitake mushrooms, carrots, and spring onions. Deseed the red pepper and slice it into half rings.
Grate the lime zest (don't grate the white part, as it's bitter) and juice the lime. Bring a pan of water to a boil and cook the rice noodles according to the package directions. Drain.
Heat the sunflower oil in a pan and sauté the shiitake mushrooms, carrots, spring onions, bean sprouts, and half the red chili pepper for 5 minutes. Add the rice noodles, Verstegen Guilt Free Sweet Chili Sauce, lime zest, and lime juice and stir.
Divide the rice noodles among the plates and garnish with the cashew nuts and the remaining red pepper.
