Taco with beef chimichurri and grilled vegetables
Taco with beef chimichurri and grilled vegetables
Beef chimichurri taco! Delicious, but what is chimichurri? Chimichurri is a popular sauce from Argentina. You can use it to marinate your meat or serve it alongside it. It's made with various herbs, olive oil, vinegar, and possibly pepper. This spicy Argentinian sauce is served with these tacos, which are deliciously filled with steak, grilled vegetables, and crème fraîche.
Preparation
Preheat the oven to 200°C (400°F). Pat the steak dry with paper towels. Sprinkle both sides with sea salt. Heat 1 tablespoon of oil and the butter in a pan and sear the steak for 2 minutes on each side. Remove from the pan and let it rest on a plate. Slice.
Halve the bell peppers, remove the seeds, and halve them. Place on a baking sheet lined with parchment paper and roast in the oven for 20 minutes. Remove from the oven and cut into strips. Peel the red onion and slice into half rings. Halve the avocado, remove the skin and pit, and slice. Heat a grill pan and grill the avocado for 2 minutes.
Combine the remaining olive oil with the World Spice Blend - Chimichurri. Toast the almond shavings in a dry pan until they begin to brown. Prepare the tortillas according to the package directions.
Divide the lettuce among the tortillas, followed by the meat, grilled bell pepper, grilled avocado, red onion, and crème fraîche. Garnish with almond shavings and chimichurri dressing.
