Traybake sweet potato from the oven with feta
Delicious vegetarian dish with roasted vegetables and sweet potato.
A delicious vegetarian baking tray with roasted vegetables and sweet potato. Top the tray with crumbled feta cheese. Perfect for a weeknight dinner or as a side dish for Christmas dinner.
Preparation
Preheat the oven to 200 degrees.
Cut the orange sweet potatoes into wedges, the bell peppers into strips, and the red onion into wedges. Halve the zucchini lengthwise and slice.
In a large bowl, combine the olive oil with the World Spice Blend - Nordic.
Add the sweet potato, peppers, red onion and zucchini and mix well, so that the mixture is distributed among all the vegetables.
Divide the marinated vegetables over a baking sheet lined with baking paper and bake in a preheated oven for 20 to 25 minutes.
In the meantime, crumble the feta cheese.
Divide the roasted vegetables and sweet potato over the plates.
Garnish the dish with crumbled feta cheese. Serve immediately.
