Vegan poke bowl
Poké bowl with lots of vegetables.
This vegan poké bowl is packed with vegetables, like edamame beans, cherry tomatoes, grated carrot, avocado, and cucumber. This delicious vegetarian dish is seasoned with the World Spice Meals – Poké Bowl.
Preparation
Soak the sushi rice in cold water for 15 minutes. Rinse the rice and add 300 ml of water. Bring the rice to a boil, reduce the heat, and cook the sushi rice covered for about 10 to 15 minutes, or until tender.
Mix the vinegar and sugar thoroughly in a bowl. Once the sushi rice is cooked, stir this mixture into the rice. Let the sushi rice cool completely.
Drain and rinse the chickpeas. Let them drain. Halve the cherry tomatoes, slice the avocado, and wedge the cucumber.
Divide the sushi rice between two bowls. Then divide the vegetables over the rice and sprinkle 3 teaspoons of World Spice Meal - Poké Bowl on each bowl.
Variatietip
Optioneel kun je gebruik maken van bruine rijst, zilvervliesrijst of quinoa in plaats van sushirijst.

- 75 g edamame boontjes
- 75 g snoeptomaten
- 50 g geraspte wortel
- 1 klein blikje kikkererwten (200 g)
- ½ avocado
- ¼ komkommer
- 1 el azijn
- 1 el suiker
- 3 tl World Spice Meal - Poké Bowl
