A colorful and refreshing couscous salad with fresh vegetables. The Spice Blend for Veggie Couscous Salad adds extra heartiness to this delicious vegetarian dish. Serve the salad for lunch or as a quick meal.

Preparation

Soak the couscous according to the instructions on the packaging with the World Spice Meal - Couscous.

Drain the corn. Halve the cherry tomatoes. Coarsely dice the cucumber and thinly slice the bell pepper and avocado. Slice the red onion into half rings. Strip the cilantro leaves from the stems and roughly chop.

Squeeze the juice from the lime and mix it with the olive oil.

Combine the couscous with all the ingredients. Garnish the salad with the dressing and fresh cilantro leaves. Season with sea salt to taste, if desired.
