Japanese-style vegetarian wok dish
This delicious vegetarian Japanese stir-fry is made with udon noodles, bok choy, shiitake mushrooms, and sugar snaps. It's a vegetarian main dish that's easy to make on a weekday. The blend contains miso, a fermented soybean paste made according to a Japanese recipe. The miso gives this dish a wonderfully savory flavor that's perfect for vegetarian dishes!
Preparation
Cook the udon noodles according to the instructions on the package.
Chop the red onion, shiitake, and spring onion. Slice the bok choy, reserving the leaves and stems separately. In a small bowl, combine the World Spice Blend - 5 spices with the soy sauce and water to form a sauce and set aside.
Heat 1 tablespoon of oil in a wok and stir-fry the shiitake mushrooms over high heat until golden brown. Set aside.
Add another tablespoon of oil and stir-fry the red onion, bok choy stems, and sugar snaps for about 5 minutes over high heat. Add the fried shiitake mushrooms, spring onions, the remaining bok choy, the sauce, and the fried noodles and stir-fry well for about 1 minute over high heat.
Serve the Japanese wok with a handful of unsalted peanuts.
