A filling lasagna with tons of vegetables! This zucchini lasagna is a nutritious alternative to the classic lasagna. Thin zucchini slices replace traditional lasagna sheets and provide an extra serving of vegetables. The homemade tomato sauce, seasoned with delicious lasagna herbs, is a breeze to make!

Preheat the oven to 180°C (350°F). Slice the zucchini into 0.5 cm slices using a mandoline or cheese slicer. Peel and finely chop the garlic and onion.

Cut the eggplant and bell pepper into 1 cm cubes. Cut the celery into 0.5 cm pieces. Arrange the zucchini slices on a baking sheet lined with parchment paper. Let them sit for 10 minutes and pat dry. Grill the zucchini in the oven for 8 minutes.

Heat the olive oil in a pan over medium heat and sauté the garlic and onion until translucent. Add the eggplant, bell pepper, celery, and green olives and cook for 6 minutes.

Quarter the plum tomatoes, remove the seeds, and puree them with the World Spice Meal - Lasagna and half the basil using an immersion blender to create a sauce. Add to the pan with the vegetables and simmer gently for 2 minutes.

Spread 1/4 of the zucchini slices over the bottom of the baking dish and top with 1/3 of the vegetable sauce. Repeat this twice more, ending with a layer of zucchini. Sprinkle the grated cheese over the zucchini lasagna. Bake for 20 minutes or until cooked through.

Meanwhile, tear the remaining basil leaves. Remove the lasagna from the oven, garnish with the basil leaves, and serve.
