Vegetarian pasta with pumpkin and spinach. A delicious and easy vegetarian pasta with pumpkin, spinach, and chestnut mushrooms.
Preparation
Slice the onion into half rings and halve the chestnut mushrooms. Cook the spaghetti in plenty of water for about 10 to 12 minutes until al dente. Then cook the pumpkin cubes for about 10 to 12 minutes until tender.
Meanwhile, heat the olive oil in a pan and sauté the halved onion rings. Add the chestnut mushrooms and the World Spice Blend - Napoli and cook for 2 minutes. Add the spinach and let it wilt, stirring constantly. Finally, add the pumpkin cubes and the cream and simmer over low heat for 2 minutes.
Meanwhile, drain the spaghetti and pumpkin cubes. Add both to the vegetable mixture, stir, and season with black pepper to taste. Garnish with grated Parmesan cheese.

- 125 ml light kookroom
- 1 ui
- 2 el World Spice Blend - Napoli
- 3 el olijfolie
- Zwarte Peper, naar smaak
